This is Texas comfort food at its best, folks. It is absolutely amazing. The filling has potatoes, pinto beans, onions, and mushrooms. You don’t have to be a vegan to love this. This recipe is proof that enchiladas don’t need cheese to be delicious! MMMMMMMM Cashew cream on top, hooray! :D
